While you may set out dieting with lots of high hopes for success, your body may have a different opinion. The human body, in all of its wonder, will often react negatively to a sudden reduction in calories, even if your weight-loss plan is nutritionally complete. The reason for this is that when you cut back on food, the body perceives this as a threat to its well-being (or at least to the status that it has become so accustomed to that has resulted in the obesity). As a result, the body tries to protect itself by slowing its basal metabolic rate - the rate at which it burns calories while at rest, thus making the weight loss process more difficult. So, in order to counter this effect, it is important to make gradual changes in your eating habits, so as to gradually reset your base metabolism.
